And while they sometimes have a reputation of being time consuming to prepare, you can avoid this by cutting down on all the optional sides and trimmings to focus on the essentials instead. 

Tender, succulent meat sits at the heart of any great roast. Add in some roasties, gravy and a side of veg, and you've already got a meal to remember.

Fun crafting

For an easy way to entertain your kids over Easter, how about laying on some creative challenges?

Side of salmon with harissa & pomegranate 

Make salmon the star of the show, bejewelled with pomegranate seeds and fresh mint leaves.

Serves: 6

Ready in 40 mins

Info: GF, EF, 1 or 5-a-day 

 
  • 4 tsp Asda Harissa Paste
  • 4 tsp runny honey
  • 1 lime, juice and zest (use 2 tsp juice)
  • 800g Asda Boneless Salmon Side
  • 1kg Asda Extra Special Baby Potatoes, halved
  • 175g frozen peas
  • 50g unsalted butter
  • 1 tbsp olive oil
  • 1 large leek, sliced
  • 2 Little Gem lettuce, sliced into quarters with the stalk still connecting the leaves
  • 3 tbsp chopped fresh mint leaves
  • 4 tbsp Asda 50% Less Fat Crème Fraîche
  • 1 x 80g pack Asda Sweet & Crunchy Pomegranate Seeds

1 Preheat the oven to 200ºC/180ºC fan/gas 6. Mix the harissa paste, honey and lime juice to make a glaze. Lay the salmon on a large roasting tray lined with baking paper. Brush with the glaze and roast for 20–22 mins, until just cooked and flaky.

2 While the salmon is in the oven, cook the potatoes in a pan of boiling water for 15–17 mins until tender.

3 Put the frozen peas in a bowl and cover with boiling water; set aside. Melt half the butter in a frying pan with the oil. Fry the leeks over a medium heat for 3 mins until softened.

4 Increase the heat and add the lettuce wedges to the pan, flat side down. Cook for 2–3 mins until starting to brown, then turn. Repeat with the other side. Drain the peas and add to the pan. Reduce the heat and cook everything for a further 1 min.

5 Drain the potatoes well, return to the pan, season and add the remaining butter and half the mint leaves. Gently mix.

6 Put the salmon on a serving board. Drizzle with crème fraîche. Scatter over the pomegranate seeds, lime zest and mint.

Pesto lamb leg with saucy potatoes 

Elevate your succulent Easter roast with plenty of herby flavours to give a burst of springtime freshness.

  • 2 x 30g packs Asda Cool & Refreshing Mint
  • 130g pack Asda Extra Special Basil Pesto
  • 4 tbsp extra virgin olive oil
  • Asda Tender Lamb Leg (typically 2.15kg)
  • 2kg pack Asda Smooth & Rich Red Potatoes, peeled and cut into thick wedges
  • 1 garlic bulb, cloves, bashed and peeled
  • 20g pack Asda Delightfully Fragrant Growing Rosemary
  • 20g pack Asda Fresh & Earthy Thyme
  • 300ml lamb (or chicken) stock
  • 1 lemon, zested and juiced

1 Pick and finely chop most of the mint leaves, adding them to the pesto with 3 tbsp oil and 6 tbsp water (or whizz together in a small food processor). Trim the lamb leg of excess sinew and score all over at 2cm intervals, about 1–2cm deep, season well and spread over ½ the pesto (reserve the rest to serve). Leave the lamb to marinate while you prep the potatoes, or for up to 24 hours in the fridge. Preheat the oven to 180°C/160°C fan/gas 4.

2 In a very deep baking tray or roasting tin (that will hold all of the potatoes and lamb), toss the potato wedges and garlic cloves, reserving 1 for garnish, with remaining oil and seasoning, then spread in an even layer. 

Add the rosemary and thyme (bunched and tied with kitchen string if you have some) to the centre of the tray. Pour stock over the potatoes then top with the lamb leg.

3 Roast for 1 hr. Remove and cover just the lamb with foil and roast for about 20 mins more for medium-rare (55°C internal temperature); 25–30 mins for medium (60°C); 30–35 mins for medium-well (65°C); 35–40 mins for well done (70°C+). 

For accuracy, test with a meat thermometer.
